Types of Tea and How to brew?

Types of Tea

 Family of Tea is shown below.

Sencha: Standard Japanese green tea.
Color is light green - green. Some of them are sweet some of them are strong aroma, it's depending on a kind.
Every year, new leaves(Shincha) come out beggining of May.

Bancha: Lower grade of green tea.
Color is light yellow - light brown. Most likely, taste, color, aroma are not as good as Sencha. It's for daily use.

Houjicha: Roasted green tea.
Color is light brown - dark brown. Some are well roasted and others are light roasted. It has a strong aromatic smell. I personally would like to have a cup of houjicha after every meal.

Genmaicha: A mix of green tea and roasted brown rice.
Color is light green - light yellow. It has a strong aroma of brown rice in tea. Many of my friends in abroad likes to have Genmaicha.

Gyokuro: Very high end of green tea.
Color is light green - light yellow. It is very special green tea. By covering tea trees to block direct sun light at the period of growth, the amount of an amino acid increase in tea leaf. However because of this growth process, it's hard for mass production.
Use 60C(140F) or lower temperature of water to brew slowly.

Maccha: Traditional powdered japanese green tea. It's basically the same as Gyokuro leaves, but very high end of it. The manufacturing process is different from Gyokuro. Powder is 5-12microns(about the size of a foundation in cosmetic use ).

How to Brew~Different ways to brew Green TEA!~

Enjoy "HOT" Tea.
With 5~8g(0.15~0.28oz) of tea leaf can make about 500cc(17oz) of HOT green tea.

Instructions for Sencha, Bancha, Houjicha.
Different instruction for Gyokuro and Maccha.


Please pour boiled water to 80% of the cup to warm up your cup first.

The 1st cup of tea...

  1. put 5~8g of tea leaf of in a teapot
  2. pour hot water into a teapot from the cup
  3. let it still for 15secs
  4. all the tea in the teapot must be finished pouring it out

The 2nd cup of tea...

  1. pour hot water into a teapot from kettle
  2. let it still for 5secs
  3. all the tea in the teapot must be finished pouring it out

The 3rd cup of tea...

  1. pour hot water into a teapot from kettle
  2. let it still for 30secs
  3. all the tea in the teapot must be finished pouring it out

*Because of the tea leaf condition, there are seconds difference.



Enjoy "ICED" Tea.

With 10g(0.35oz) of tea leaf can make about 1000cc(34oz) of ICED green tea.

Please prepare a picher full of icecubes.

Brew a cup of very strong and dark green tea.

  1. put 10g of tea leaf in a teapot
  2. pour hot water(50~100cc(1.7~3.4oz)) into a teapot
  3. stir and let it still for 60secs
  4. all the tea in the teapot must be finished pouring it out into a picher full of icecubes to thinner upto 1000cc(34oz)

* The point is to cool the hot tea down rapidly. Then the color stays beautiful green!
